Shrimp taco recipe: How to make enchilado shrimp tacos

Without a doubt, tacos are one of the most recognized and popular dishes in Mexican cuisine around the world. There are countless versions and recipes since one of their great advantages is that they can be prepared with endless ingredients to suit the consumer. When they are served to the table, no diner can resist. Also, its versatility allows this dish to adapt to all needs, be it vegetarians, vegans or carnivores. You can prepare your tacos with carnitas, chicken, grilled vegetables, fish, etc.

On this occasion, we propose a version of the traditional recipe, the Tijuana-style enchilado shrimp tacos. It is a very typical dish of this Mexican region that will not leave anyone indifferent. The combination of seafood, spicy and different dressings, accompanied by delicious golden and crispy tortillas, will become a guaranteed hit even for the most demanding palates.

Ingredients for Shrimp taco recipe:

  • 250 grams of shrimp
  • 2 – 3 cloves of garlic
  • 1 teaspoon of olive oil
  • 1 teaspoon of butter
  • 1 tablespoon of lard
  • Salt and pepper to taste
  • Chili powder to taste (2 – 3 tablespoons)
  • Grated cheese (optional)
  • Chipotle sauce
  • Corn tortillas
  • For the sauce
  • 1 – 2 jalapeños
  • 1 clove garlic
  • ½ avocado
  • A few coriander leaves

Clean the shellfish. Raw, peel the shrimp and do not forget to remove the thin dark strip that divides its loin. You can leave them like this or open them in a butterfly (with the tip of the knife, divide them in half, without separating the two loins).

Heat the tablespoon of oil and the tablespoon of butter in a pan. Then add 1 or 2 minced garlic cloves. Let them brown for just a couple of minutes to avoid burning.

Next, add the shrimp to the pan and sauté them with garlic over low heat. Sprinkle with a pinch of salt and pepper. Add the chili powder and a few drops of chipotle sauce. Keep in mind that the sauce and chili will give your enchilado shrimp tacos spiciness, so add the amount that suits your taste. Cook the shrimp for 5 to 8 minutes, depending on the size.

Next, prepare the tortillas. In a pan, melt the tablespoon of lard and add one tortilla for each taco you will make. With a couple of minutes on each side, they will be ready. If you want your shrimp tacos enchilado con queso, put it on top of the tortilla while it’s still hot in the pan.

To assemble the taco, place a tortilla (with or without cheese) on a plate and add a tablespoon of shrimp enchilados in the center. Do not exceed the amount, as it will be more difficult to close the block later. If desired, this is the time to add a little more chili or chipotle sauce for an extra spicy kick.

To complete the tacos, make the side salad. The ideal is to prepare it with thin strips of cabbage or lettuce and small tomato and red onion dices. Garnish the salad with a tablespoon of sour cream and a dash of lemon.

Finally, you only have to plate. Fold the tortilla in half to give it the characteristic taco shape. Place a tablespoon of salad on top and … voila!
